Instructions

  1. Cook the Rice
    Rinse 1 part brown rice and simmer in 2 parts water. Cook for 35–40 minutes, covered. Once done, let it sit for 5 minutes, then fluff with a fork.

  2. Heat or Prepare the Beans
    Rinse canned black beans and warm in a pan with a pinch of cumin and salt. If using dry beans, soak and cook ahead of time until soft but intact.

  3. Prepare Your Veggies
    Dice red capsicum, shred cabbage finely, and slice the avocado last to prevent browning. Squeeze fresh lime over the cabbage if prepping ahead — this keeps it vibrant and boosts flavor.

  4. Warm the Tortillas
    Use a skillet or dry pan and warm each tortilla for 15–30 seconds per side until soft and pliable.
